The story of Cousances? began in 1553, when Jehan Barisien paid the lord of the manor for the right to cast iron. His foundry, the first cast iron cookware foundry in the world, was called Cousances. Four centuries after Cousances poured its first cocotte, fellow cast iron expert Le Creuset purchased the original Cousances brand and foundry in 1957. This expansion added an important chapter to Le Creuset’s story of French heritage and elegant craftsmanship.
In celebration of the world’s oldest cast iron cookware foundry, Le Creuset’s Cousances line revives legacy designs shared by Cousances and Le Creuset for decades. The doufeu has a recessed lid that holds ice. As warm moisture evaporates inside the doufeu, the cool ice-filled lid causes this moisture to condense. Specially designed dimples on the flat interior of the lid then direct the moisture back down onto the food. This self-basting effect minimizes the need to add additional water during cooking.
